OREGANO or MARJORAM:

There are various types of Marjoram.

Sweet Marjoram and Wild Marjoram commonly known as Oregano. Oregano tea aids digestion.

Sweet marjoram has a strong aromatic scent, a fairly delicate flavour, good in salads and combines well with meat, poultry, game , pulses and some vegetables particularly carrots, cucumber.

Wild Marjoram or oregano is popularly used in pasta, pizza sauces and tomato dishes. In Greece it is used frequently with lamb.

PARSLEY : Originated in Southern Europe, used to flavour or garnish many dishes, it is one of the most commonly used plants in cookery.

There are 3 varieties of parsley –

Common parsley, Curly leaved parsley and Turnip rooted parsley.

Common parsley have flat smooth leaves and most flavour.

Curly leaved parsley , bright green crinkly leaves used as a garnish.

Turnip rooted parsley cultivated for its swollen root. Its cooked like celeriae (celery root) and used in soups.

In France, there are other plants known as parsley. Neopolitan or celery leaved parsley (persil noir) is a type of wild celery.

Coriander is known as Arabian or Chinese Parsley.

Dill is called Russian or Swedish Parsley.

Fresh parsley is an ingredient of a bouquet garni and is used in marinades and stocks.

Parsley can be mixed with chopped garlic and served with sautéed or fried dishes. Used as a garnish, chopped parsley is added at the end of the dish or is sprinkled over food just before serving. Fried parsley is used as a garnish for fried items. Butter, sauces such as green sauce, Italian sauce, maître d’hotel is flavoured with finely chopped parsley. Parsley can be dried and also freezes well.High in bioflavonoids and other anti cancer compounds.
