CHICKEN PERI PERI


Chicken Peri-Peri

Ingredients

  • 2 fresh hot chilli peppers (jalapeno), chopped (I used canned jalapenos)

  • 2 Tbsp lemon or lime juice

  • 4-5 Tbsp olive oil or more to achieve desired consistency

  • 2 cayenne pepper or red pepper (adjust quantity to taste), roasted and de seeded

  • 1 red bell pepper, roasted and de seeded

  • 2 tsp garlic crushed

  • 1 Tbsp paprika

  • 1 tsp sea salt

  • 1 Tbsp dried oregano or to taste

  • 1/2 kg chicken breast, cut in medium size

  • Fresh Cilantro (Coriander)

Method:

  1. Combine all ingredients (apart from the chicken) in a blender and process to a smooth paste. Taste and adjust with salt, pepper, cayenne pepper and paprika.

  2. Marinate chicken breast and refrigerate for at least 12 hours to allow flavors to develop.

  3. Grill on the hot grilldle or grill giving 1 min per side for 5 mins .

  4. Baste the marinade with brush in between.

  5. Dilute some chicken or veg stock in left over marinade and pour in the pan and cook for another 10 mins covering the pan.

  6. Serve hot with chopped cilantro , lemon wedges, and sliced jalapeno.
