Organic Basa fish in Black Bean Sauce
Ingredients:-
1 fillet of boneless Basa fish(thinly sliced) 2 tablespoon black bean sauce 1 small onion (quartered)
1 small celery stem sliced 2 fresh red chilies (deseeded) 1 small red bell pepper (cut into small pieces) 3 cloves of sliced garlic(cut into 1.5 inch length) 5 slices fresh ginger 1/2 teaspoon fish sauce 1/2 teaspoon sugar 1/4 tablespoon corn starch (mix with 3 tablespoons water as thickner.
For Basa
200 gms Refined flour
1 no Egg
20 ml water
Salt ,Pepper to taste
Oil for deep frying
Method:
For preparing Basa,
1)Mix flour egg and water together and make a thick batter.
2)Dip thin slices of Basa fish in the batter and deep fry it till gets light golden brown colour . Remove on a tissue paper and keep aside.
For sauce
1)Heat up the wok and add in some cooking oil. 2)Add sliced ginger, garlic onions, bell peppers, celery stem, red chilies and stir fry them until aromatic. 4)Add the black bean sauce, fish sauce, sugar and stir fry . 5)Once boiling add in the corn starch mix to thicken the sauce. Adjust the seasoning 6)Toss in the chopped spring onions and do a quick stir, dish up and serve hot.
